Kveik Yeastery K.1 Voss is an authentic, organic, multi-strain Norwegian kveik dry yeast — the original Voss culture from Sigmund Gjernes in Voss, Norway, who has preserved and shared this farmhouse yeast for decades. Unlike the isolated single-strain kveik offered by most yeast labs, Kveik Yeastery captures the full multi-strain blend of the traditional culture, delivering the depth of flavour, robust fermentation, and genuine farmhouse character that defines real Norwegian kveik. Supplied in a 7g sachet, this is one of the most versatile and forgiving yeasts a homebrewer can keep on the shelf.

What makes Voss kveik so remarkable — and so popular among modern brewers — is the combination of its extraordinary temperature tolerance and its blistering fermentation speed. Voss ferments cleanly across a huge range of 15–40°C, and at the top of that range it can take a beer from pitch to terminal gravity in as little as 48 hours. That heat tolerance makes it the ideal yeast for situations where temperature control isn’t available — a warm garage, a summer brew day, or a setup without a fermentation fridge — conditions that would stress or ruin a conventional ale yeast. Where most yeasts demand careful temperature management, Voss positively thrives in the heat.

The flavour profile is dominated by bright, juicy orange, tangerine, and citrus, with secondary notes of tropical fruit and a mild spiciness. Pitched warm and high, it leans into that clean, fruit-forward orange character that pairs beautifully with modern hop-forward beers. Fermented cooler and mashed low, it attenuates highly for a drier finish and lets subtle clove and anise notes emerge. With high flocculation it drops bright quickly, and with an alcohol tolerance up to 13% ABV it handles everything from a quick session pale to a serious high-gravity brew.

Authentic Voss kveik from Sigmund Gjernes. Pitch directly into wort by sprinkling across the surface, or rehydrate first. One 7g sachet pitches 20–30L. For fermentation below 20°C or for high-gravity worts, increase to 10g per 20L or pitch two sachets, and add yeast nutrient for a healthy fermentation.
