Castle Malting Special Belgium is the darkest and most characterful caramel malt in Belgian brewing — the grain behind the raisin, plum, and dark toffee soul of Dubbel, Quadrupel, and Belgian Strong Dark Ale. Produced by Castle Malting in Beloeil, whose heritage reaches back to 1868, this is Belgium's signature specialty malt: kilned and caramelised to a deep 260–320 EBC, where caramel character stops being sweetness and becomes dark fruit.

That transformation is what makes Special Belgium irreplaceable. Where mid-range caramel malts contribute toffee and biscuit, the intense double caramelisation at this colour develops genuinely vinous complexity — raisins and plums front and centre, layered with dried fig, dark toffee, roasted nut, and a faint burnt-sugar edge that keeps the sweetness from ever turning flat. It's the flavour most drinkers attribute to dark candi sugar or the yeast in a great Abbey ale, when a fat share of it is this malt doing the work. In the glass it brings deep mahogany-ruby colour, a fuller body, and that unmistakable dark-fruit depth that makes a Dubbel taste like a Dubbel rather than a brown ale with a Belgian yeast.

Dose with intent: 2–5% of the grain bill adds dark-fruit complexity and colour to brown ales, porters, and darker Belgians; 5–10% puts the raisin-plum character front and centre for Dubbel and Quad territory. Beyond 10% the burnt-raisin edge starts to dominate — this is a malt that rewards conviction but punishes greed. Being fully caramelised, it carries no enzymes and needs no conversion: mash it in an all-grain grist or steep it for extract brewing, either way the flavour comes through complete.

Available crushed or uncrushed. Crushed malt should be used within 2–3 weeks for optimal freshness. Uncrushed malt retains full freshness for significantly longer when stored in a cool, dry environment.
