Bestmalz BEST Chit Malt is a specialist functional malt occupying a unique position in the homebrewer's grain inventory — sitting between unmalted raw barley and a fully modified Pilsner malt, Chit Malt brings a combination of high-molecular protein, inherent starter enzymes, and near-neutral colour contribution that makes it one of the most effective foam-optimising and yield-improving additions available to the all-grain brewer.

What makes Chit Malt genuinely distinctive is its deliberately incomplete modification. Unlike a fully modified base malt where the protein matrix has been extensively broken down during malting, BEST Chit Malt retains a high level of high-molecular protein — the fraction most directly responsible for foam stability, head retention, and the lasting, fine-bubbled crown that separates a well-built beer from a flat one. Adding Chit Malt to a grain bill dominated by highly dissolved, low-protein base malts compensates for the foam-positive protein that modern high-modification malts lack, restoring the structural foam fraction without meaningfully altering flavour, colour, or fermentation character. At 2–3 EBC, Chit Malt is essentially colour-neutral — it will not push the beer darker regardless of addition rate, making it safe to use in the most colour-sensitive pale styles without compromise.
