Kveik Yeastery K.22 Stalljen is an authentic, organic, multi-strain Norwegian kveik dry yeast — the original Stalljen culture from Stig Seljeset in Hornindal, Norway, a strain whose name means “stable” after the old horse stable on the Seljeset farm that now houses a private pub and brewery. Unlike the isolated single-strain kveik sold by most yeast labs, Kveik Yeastery captures the full multi-strain blend of the traditional culture, delivering the layered flavour complexity, robust fermentation, and genuine farmhouse character that defines real Norwegian kveik. Supplied in a 7g sachet, Stalljen is one of the most rewarding and versatile yeasts a modern hop-forward brewer can keep on the shelf.

What sets Stalljen apart from other kveik — and what makes it a standout for juicy, fruit-driven beers — is its remarkably tropical flavour profile combined with medium attenuation. The aroma and flavour lead with ripe tropical fruit, mango, and pineapple, backed by secondary notes of orange and lemon — a profile that reads almost like a fruited hop addition in its own right. Crucially, Stalljen’s medium attenuation leaves behind more body and residual sweetness than a highly attenuative yeast, building the full, round mouthfeel that defines a great Hazy IPA — while the tropical yeast character stacks directly on top of modern fruit-forward hops like Azacca, Citra, and Galaxy for a beer bursting with pineapple and stone fruit. Fermented warm it expresses that tropical intensity fully; fermented cooler it turns clean and restrained, making it equally capable of producing a crisp, fast pseudo-lager.

Like all kveik, Stalljen brings extraordinary heat tolerance and fermentation speed. It ferments cleanly from 12°C up to 38°C, with full fermentation achievable in as little as 72 hours at its optimal 31–35°C — and that heat tolerance makes it ideal for brewing without temperature control, where a conventional ale yeast would throw off-flavours or stall. With high flocculation it drops bright quickly, and with an exceptional alcohol tolerance up to 15% ABV it handles everything from a session pale to a serious high-gravity brew.

Organic dry kveik yeast — multi-strain Authentic Stalljen kveik from Stig Seljeset, Hornindal. Pitch directly into wort by sprinkling across the surface, or rehydrate first. Pitch rate 0.3g/L — one 7g sachet pitches roughly 20–25L. For fermentation at the cooler end of the range or for high-gravity worts, pitch two sachets and add yeast nutrient for a healthy fermentation.
