Sodium Bicarbonate (NaHCO₃), commonly known as baking soda or bicarbonate of soda, is a food-grade brewing water mineral used by homebrewers to raise mash pH and alkalinity with precision and control. Supplied in a practical 1kg pack, this highly soluble powder dissolves quickly and completely in brewing water or directly in the mash — giving brewers a reliable, measurable way to lift a low mash pH back into the optimal enzymatic range, particularly in dark beer styles where heavily roasted malts drive the mash too acidic.

What makes sodium bicarbonate the standard alkalinity addition in the homebrewer's water chemistry toolkit is its predictable, controllable effect. Dark roasted and crystal malts are naturally acidic, and in a stout, porter, or dunkel they can pull mash pH well below the ideal 5.2–5.4 window — suppressing enzyme activity, hurting conversion efficiency, and producing a harsh, astringent edge in the finished beer. A measured addition of bicarbonate counteracts that acidity, raising both the bicarbonate (HCO₃⁻) alkalinity and the mash pH to bring the mash back into balance. Compared to sodium carbonate (soda ash), bicarbonate delivers a gentler, more gradual pH lift, making it the easier of the two to dose accurately without overshooting — the reason most brewers reach for bicarbonate first when a dark-beer mash needs correcting.

The addition also contributes sodium (Na⁺), which at moderate levels rounds out and accentuates malt character — complementing the malt-forward profile of the dark styles bicarbonate is most often used in. Because both the sodium and the alkalinity accumulate, bicarbonate is best dosed against a target water profile rather than added by feel: too much will push pH too high and leave a soapy, alkaline character, so calculate additions against your base water report.

Powder form Supplied as a fine, free-flowing powder. Dissolves quickly and completely in cold or warm brewing water. Store in an airtight container to prevent moisture absorption and caking.

Key Features

  • Food-grade sodium bicarbonate (NaHCO₃) — baking soda, 1kg pack
  • Raises mash pH and bicarbonate alkalinity — corrects over-acidic dark beer mashes
  • Gentler, more controllable pH lift than sodium carbonate (soda ash)
  • Contributes sodium (Na⁺) — rounds out and accentuates malt character at moderate levels
  • Highly soluble — dissolves instantly in brewing water with no pre-treatment
  • Economical 1kg pack — sufficient for a very large number of water treatment additions

Usage

Best suited for: Raising mash pH in dark beer water profiles, counterbalancing acidic roasted and crystal malts, building bicarbonate alkalinity for malt-forward dark styles

Typical styles: Stout, Porter, Dunkel, Schwarzbier, Brown Ale, Baltic Porter, dark Belgian ales

Dose: Add to strike water or the mash according to your target water profile. Always calculate additions against your base water report using brewing software, and measure mash pH before adding more — bicarbonate raises pH gradually, so adjust in small increments.

Note: Sodium and alkalinity both accumulate. Excessive addition pushes pH too high and contributes a soapy, alkaline off-character. Keep within recommended water profile and sodium targets for the style you are brewing.
