Dry Hopping Guide: Cryo vs T90, Timing & Technique

Ask ten brewers how they dry hop and you'll get twelve answers. When to add, how much, for how long, pellets loose or bagged, and - the newer question - whether those concentrated Cryo hops are worth the extra money over classic T90 pellets.

We've batch-split and tested this more times than we can count, on the same wort, side by side. This guide is what we've learned: what actually moves the needle on hop aroma, what's mostly ritual, and how to get more out of every gram of hops you buy.



What Dry Hopping Actually Does (And Doesn't)

Dry hopping means adding hops after the boil - during or after fermentation - so their oils dissolve into the beer without being boiled off. Because there's no heat, dry hops contribute essentially no bitterness. What they give you is aroma and flavour: the tropical, citrus, piney, dank character that defines modern hoppy styles.

That's the key mental model: boil hops build bitterness, dry hops build aroma. The two jobs are separate, and your recipe should treat them separately.



T90 Pellets vs Cryo: What's the Difference?

T90 pellets - the standard

T90 pellets are whole hop cones that have been hammer-milled and pressed into pellets. They contain everything the cone had: the resins and oils you want, plus the leafy, vegetal plant material that comes along for the ride. They're the workhorse of homebrewing - consistent, widely available, and excellent value.

Cryo hops - the concentrate

Cryo hops are made by freezing whole cones at very low temperatures and mechanically separating the resin-rich lupulin glands from the leafy material. What's left is a concentrated pellet with roughly twice the resin and oil content of the same variety in T90 form.

In practice, that means:

  • Use about half the weight for a similar aroma impact
  • Less vegetal, grassy character - because most of the green plant material is gone
  • Less beer lost to hop sludge - less material absorbing your precious beer in the fermenter

So which should you buy?

Our honest take, after plenty of split batches: both, for different jobs.

  • For heavily dry-hopped beers - Hazy IPAs, big West Coast IPAs - Cryo shines. You get intense aroma with less grassiness and meaningfully less beer loss, which matters when your dry hop charge gets large.
  • For moderate dry hops, boil additions, and whirlpool additions, T90 remains excellent value and delivers a slightly broader, fuller expression of the variety that some brewers actually prefer.
  • A blend - part T90 for depth, part Cryo for punch - is a genuinely great approach for hop-forward beers and our usual choice for a big dry hop.

When to Dry Hop: Timing Matters More Than Quantity

Adding more hops is the obvious lever. Adding them at the right moment is the better one.

During active fermentation (biotransformation)

Adding a portion of your dry hops while the yeast is still working - typically around the halfway point of fermentation - lets yeast enzymes transform some hop compounds into new aromatic ones. This biotransformation tends to push aroma toward riper, juicier, more tropical territory. It's a signature move in Hazy IPA brewing.

After fermentation (the classic dry hop)

Adding hops once fermentation is complete gives you the purest, most direct expression of the hop variety - what's in the pellet is what you smell in the glass. This is the standard approach for West Coast styles where you want bright, defined hop character.

How long?

Shorter than tradition says. Most of the aroma extraction happens in the first 2–3 days. Beyond about 4–5 days you gain little and start risking grassy, vegetal notes - especially with T90 pellets and their plant material. Get in, extract, get the hops out (or the beer off them).

A simple schedule that works

  • Hazy / juicy styles: half the charge at high krausen (mid-fermentation), half after fermentation completes. 2–3 days on the final charge, then cold crash.
  • West Coast / bright styles: full charge after fermentation, 2–3 days, cold crash, package.



Loose or Bagged?

Loose pellets give maximum contact and extraction, but more sludge and potentially more beer loss. A hop bag or stainless filter keeps things tidy and makes removal trivial, at the cost of slightly less extraction (compensate by adding ~10% more hops, or give the bag a gentle swirl daily).

The Oxygen Problem (And the Pressure Solution)

Here's the uncomfortable truth about dry hopping: every time you open your fermenter to throw hops in, oxygen rushes in with them. And oxygen is the sworn enemy of hop aroma — it's the difference between an IPA that smells like a fruit stand and one that smells like cardboard three weeks later.

This is where dry hopping connects directly to pressure fermentation. If you're fermenting in a pressure-capable vessel like the FermZilla, you can dry hop with dramatically less oxygen exposure:

  • Purge before you drop: load hops into the collection container or a sealed chamber, purge it with CO2 from your CO2 setup, then introduce them to the beer without ever opening the main vessel to air.
  • Closed transfer after: when it's time to package, push the finished beer to your keg under CO2 pressure - hops stay behind, oxygen stays out, aroma stays in.

How Much to Use: A Starting Guide

Treat these as starting points. Hop varieties differ enormously in intensity — and your own taste is the final judge. Which brings us to the part where the guesswork ends.

Final Sniff

Dry hopping rewards precision more than excess. The brewers making the most aromatic beers aren't necessarily using the most hops - they're using the right format, at the right moment, for the right duration, with oxygen locked out of the room.
